There are all sorts of Chicken soup recipes out there, but this one is our favorite because it is simple to make and sooo comforting!

Ingredients:

1 whole chicken or 3-4 chicken breasts -1 can diced tomatoes (14.5 oz) -3 cups chicken broth or water -1/2 cup chopped onion -1 garlic clove, minced -2 carrots, peeled and sliced into thin coins -1 bay leaf -salt and black pepper to taste -1/2 teaspoon dried thyme leaves -8 ounces wide egg noodles, cooked according to package instructions Optional toppings: fresh parsley, shredded cheese, sour cream etc. Instructions:

In a large pot or Dutch oven, place the chicken or chicken breasts and cover with the chicken broth or water. Add the can of diced tomatoes (with their juice), chopped onion, garlic clove, carrots, bay leaf, salt and black pepper to taste, and dried thyme leaves. Bring to a boil over high heat. Reduce the heat to low and simmer for 30 minutes. Remove the chicken from the pot and let cool slightly before shredding or chopping into bite size pieces. Discard the bay leaf. Add the cooked egg noodles to the soup pot and stir to combine. Ladle soup into bowls and top with shredded chicken, fresh parsley, shredded cheese, and sour cream (if desired). Serve hot. Enjoy!
