  • 1 onion, diced * 4 cloves garlic, minced * 1 bell pepper, diced * 8 cups chicken broth * 2 cans diced tomatoes * 2 cups shredded cooked chicken * 1 cup frozen corn * 1 cup cooked white rice * salt and pepper to taste

Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and bell pepper and cook until softened, about 5 minutes. Add the chicken broth and tomatoes and bring to a boil. Reduce the heat to low and add the shredded chicken, corn, and rice. Season with salt and pepper to taste. Serve hot.

Instructions:

Heat the oil in a large stockpot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes. Add the chicken broth, carrots, celery, roasted red pepper, tomatoes, basil, thyme, black pepper and bay leaves. Bring to a boil. Reduce the heat to low and simmer for 30 minutes.

Add the chicken breasts and simmer until cooked through, about 15 minutes. Remove the chicken from the soup and let cool slightly before slicing into cubes. Discard the bay leaves.

*To serve: Divide the cooked rice among 4 bowls. Ladle the soup over the rice and top with sliced chicken and fresh parsley leaves if desired.
